Coconut and Lime Soup

Ingredients
- 300g Potatoes, Cubed
- 150g Carrots, Chopped
- 75g Onions, Finely Chopped
- 200g Leek, Chopped
- 50ml Lime Juice
- 350ml Good Quality Coconut Milk.
- 350ml Hot Chicken or Vegetable Stock
- Salt & Pepper to taste
- Half Teaspoon Ginger Spice.
- Basil, For Decoration
- 1 Teaspoon Olive Oil
Method
- Saute the leek and onion in the olive oil, until the onions are soft.
- Add the Potatoes, Carrots, Coconut Milk, Stock, Lime Juice and Ginger Spice to the soup maker, along with the onions and leek.
- Choose the smooth option.
- Serve with basil or grated rind of lime on the top.
